We are unable to offer any rattlesnake meat for the 2012 season due to shortages in Texas. We will review the situation next year.
We sell frozen Texas Western Diamondback rattlesnake meat by the pound with a 100-pound minimum order (please do not call trying to order one or two pounds--you will be wasting your time and ours). The rattlesnake meat is harvested from wild snakes in Texas and is prepared at a USDA-approved facility there that supplies restaurant supply groups and chains. Individual restaurants are welcome to order, but the 100-pound minimum is enforced.
The meat supplier started buying rattlesnakes in 1976 and by the 1988/1989 season was the largest producer in the country. They have grown by word of mouth and repeat business and can ship up to 2,000 pounds at a time.
The meat comes from two groups of snakes: medium snakes weighing 3/4 to 1 pound and larger snakes weighing from 1 to 3 pounds. Buyers of the medium snakes often are given small ones at no extra charge when available. The larger snakes come in a range of sizes and are never sorted into just XL or jumbo ones.
The snakes are gutted, are skinned, have the heads and tails removed, are repeatedly washed in icy water, and then are frozen. The meat is shipped bone-in and will have to be filleted. The safest way to ship is by airline, as the airlines guarantee delivery and insure the shipments. Most customers, however, ship by UPS to save cost. UPS will not insure perishable products, and all shipments by UPS are at your own risk. We typically ship on Mondays to avoid any delays over the weekend. The meat is packed and will last up to 9 or 10 days when shipped by UPS. We have rarely had any problems shipping by UPS, but shipments can get lost or delayed and the meat will spoil. It is best to monitor tracking data to ensure that the shipments are headed the right way and that corrective action is taken promptly if the packages are not moving or are moving in the wrong direction.
Most snakes are harvested in the fall, winter, and early spring. Supplies of meat can vary throughout the year. Please call to confirm availability.

No exports because of extensive paperwork requirements and arbitrary enforcement by various agencies. Should overseas customers wish to purchase meat for export, they can arrange the export themselves, as we will not pursue this.
